I also love tomato, basil and mozzarella paninis as well. It's funny, I didn't use to like tomatoes very much and now I'm a big fan. We get a period in August when the tomatoes are growing too fast. Last year, I made a bunch of them into sauce and then froze it. I made pizzas with the sauce for a couple of months.
